WThis is an easy take on a beverage from our latest menu. It's a large-volume prepared mix that's bursting with flavours of the holiday season, which makes it excellent for hosting a holiday party. Save the extra citrus syrup to use in brunch beverages, desserts, or to make additional servings of this cocktail.

Serves 10 guests
For the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (yields 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
To prepare the Cordial: Put the listed items into a saucepan, bring to a gentle boil, stirring until the sugar dissolves. After that, take off the heat allowing it to cool fully. Transfer into an clean bottle, seal and store in the refrigerator, where it will keep for about one month.
Preparing the Cocktail Base: Pour the specified liquid ingredients into one sizeable container, allow it to infuse for an hour, then strain preferably using muslin, to ensure it's perfectly clear.
To serve: Add 85ml of the batch mix to a mixing glass packed with ice, and agitate gently for one minute to chill. Strain to a frosted cocktail glass or a similar vessel, top with a few cranberries and complete it with a quick spritz of mandarin oil over the top.
